Fix COPY option formatting and round-trip handling - #235

Fixes COPY option formatting by using the standard string-literal and identifier writers, preserving quoting and national prefixes while retaining existing casing behavior. Adds round-trip coverage across parser versions and casing modes without modifying the source AST or existing baselines.
